Ingredients
- 4 ounces lean pork chop, cut in thin 1-inch strips
- 1 teaspoon plus 2 tablespoons cornstarch, divided
- 2 teaspoons sugar
- 1 teaspoon plus 1 tablespoon low-sodium soy sauce, divided
- 4 cups low-sodium chicken broth
- 8 ounces firm or extra-firm tofu, drained and diced
- 8 ounces thinly sliced shiitake mushrooms
- 1 8-ounce can sliced bamboo shoots, drained
- 1 medium carrot, shredded
- 2 tablespoons water
- 1 large egg, well beaten
- 2 tablespoons rice wine vinegar
- 2 teaspoons sesame oil
- Salt and pepper, to taste
- 1 green onion, finely chopped
- 2 teaspoons shredded fresh ginger root (optional)
