Snickerdoodle Snacking Cake

Ingredients

• 1 cup (2 sticks) unsalted butter
• 2 cups sugar
• 2 tablespoons soy milk, Gefen Almond Milk, or non-dairy creamer
• 2 eggs
• 1 teaspoon vanilla extract
• 2 and 3/4 cups all-purpose flour, such as Glicks
• 1 teaspoon baking powder
• 1/2 teaspoon cream of tartar
• 3/4 teaspoon salt
• 1 (8-ounce) block cream cheese (use non-dairy for pareve cake)
• 1/2 cup unsalted butter, at room temperature
• 3 cups Gefen Confectioners’ Sugar, plus an extra 1/4 cup if needed
• 1 teaspoon pure vanilla extract
• 1/2 teaspoon Gefen Cinnamon
• 1/8 teaspoon salt
• 1/4 cup granulated sugar
• 2 teaspoons Gefen Cinnamon
