- caster sugar , for sprinkling
- 200g/7oz plain chocolate (minimum 70% cocoa solids)
- 400ml/14fl oz full-fat milk
- 100g/3½oz caster sugar
- 4 large free-range egg yolks
- 40g/1½oz cornflour
- 1 tbsp coffee extract
- 150g/5½oz double cream
- 1 tbsp limoncello
- 250g/9oz ricotta
- 75g/2½oz candied peel , chopped, plus extra for decoration
