Ingredients

• 1 homemade sponge cake or store-bought (if you’re running short on time), at room temperature
• Lychee cream
• 560g can pitted lychees in syrup
• 300ml thickened (whipping) cream
• 1 heaped tbsp (15g) icing sugar
• 1 tsp vanilla bean paste or vanilla essence
• Mango filling
• 1 mango (see tip)
• 2 tsp lime juice (from about ½ lime), plus extra to taste
• Icing sugar, to taste
