Ingredients

• 1/2 cup lime juice (3–4 limes), plus 1 lime cut into thin wedges
• 1/2 cup caster sugar
• 1/3 cup water or white rum
• 600ml thickened cream
• 300g sour cream
• 3/4 cup shaved coconut, toasted, plus extra to serve
• 3 ripe mangoes, peeled, sliced
• 450g bought double sponge cake, cut into 3cm cubes
• Honey, to serve
• Mango jelly
• 2 cups chopped fresh or thawed frozen mango
• 3 cups mango nectar
• 6 teaspoons gelatine powder
