Ingredients

• ⅓ cup (75 ml) ice water
• 1 egg, lightly beaten
• 2 ½ cups (240 g) leek, thinly sliced (about 1 large leek)
• 2 tbsp butter
• 6 eggs
• 2 cups (500 ml) 15% cooking cream
• ½ lb (225 g) white ham, diced
• 1 ¼ cups (125 g) Gruyère cheese, grated
• ¼ tsp ground nutmeg
