Ingredients

• 6 skin-on chicken thighs
• Salt
• Cracked pepper
• 2 tablespoons of cooking oil
• 1 brown onion, finely diced
• 2 garlic cloves, finely chopped
• 2 tablespoons of sweet paprika
• 1 tablespoon of smoked paprika
• 1 500ml jar of tomato passata
• ¼ cup sour cream
• 1 tsp sherry or red wine vinegar
• 1 small handful flat parsley, roughly chopped
