Balsamic Tomato Baked Orzo | BOSH!

Ingredients

• 2 tbsp olive oil
• 1 red onion
• 2 garlic cloves
• 1 red pepper
• 150g cherry tomatoes
• 2 tsp dried oregano
• 1 tsp chilli flakes
• 1 tsp salt
• 3 tbsp sun-dried tomato paste
• 250g uncooked orzo
• 1 tin of chopped tomatoes
• 1 vegetable stock cube
• 250ml boiling water
• 2 tbsp red wine vinegar
