• 2 shallots, finely chopped
• 2 cloves of garlic, minced
• 2 tbsp olive oil
• 1 tsp fresh thyme leaves
• 100g baby spinach leaves
• Salt and black pepper, to taste
• 1 tbsp soy sauce
• 50g breadcrumbs
