• 2 tablespoons finely diced seeded jalapeno pepper
• 2 tablespoons chopped cilantro
• 1 tablespoon Colavita Olive Oil
• Juice of 1/2 lime
• 1/4 teaspoon salt
• Avocado Aioli
• 1/4 cup ripe California Avocado, mashed
• 1/4 cup mayonnaise
• 1 tablespoon lime juice
• 2 garlic cloves, crushed
• 6 Large Mexican Bolillo Rolls
• 6 Large Poblano Peppers
• 1 ½ cups shredded Chihuahua Cheese
• 2 cups shredded Lettuce
