• 8 cups fresh baby spinach leaves (washed and dried)
• 4 large hard-boiled eggs (sliced)
• 1/2 cup thinly sliced red onion
• 1 cup cherry tomatoes (halved)
• 1/4 cup crumbled cooked bacon (for garnish, optional)
• 6 slices bacon (diced)
• 2 tablespoons red wine vinegar
• 1 tablespoon Dijon mustard
• 1 teaspoon honey or maple syrup
• Salt and pepper to taste
