Ingredients

• 4 medium russet potatoes, peeled and diced
• 1 small onion, chopped
• 3 cups chicken broth
• 1 cup milk
• 1/2 cup heavy cream (optional)
• 2 cups Velveeta cheese, cubed
• 1 tbsp butter
• Salt and pepper to taste
