Graukäse' soup - Recipe from South Tyrol

Ingredients

• Finely chop onion and leek and brown until soft and opaque.
• 'graukäse' cheese (crumbled)
• chives
• 1 onion
• 1 dspn leek
• 2 dspn oil or 1 tbsp butter
• 1 medium, floury potato
• 1 Splash white wine
• 750 ml vegetable or meat stock
• salt and pepper
• 150 g 'graukäse'
• 150 ml cream
