Cooking tools:

  • Dutch oven
  • Skillet
  • Stove
  • Chef's knife
  • Cutting board

  • Measuring cup
  • Tongs
  • Spoon

Ingredients

  • 2 Pounds of bone-in chicken thigh with skin on
  • 10 Ounces of fresh or dry Ramen noodles (not the cruddy stuff. You can also us Soba noodles, gluten free noodles like bean threads, etc. Play with it as it doesn't have to be Ramen noodles)

  • 4 Cups of Chicken Stock (I used unsalted)
  • 2 Cups of Beef Stock
  • 1/3 Cup plus 1/3 Cup Mirin (divided)
  • 1/3 Cup plus 1/3 Cup Reduced Sodium Soy Sauce (divided; use Tamari if you need gluten-free)
  • 4 Garlic Cloves (smashed with side of knife)
  • 6 Ounces of Kombu (not Nori; and don't leave this out as it's crucial to the flavor of the broth)
  • Bunch of Scallions
  • 2 Tbsp Sesame Seeds
  • 2 Tbsp Sesame oil
  • 2 Tbsp Grape seed oil
  • Liquid Smoke
  • Salt
