• 2 medium eggplants
• 2 small shallots, thinly sliced & soaked in cold water
• 2 garlic cloves, thinly sliced
• 2 tablespoons peanut oil
• 1 teaspoon dried shrimps, pounded into floss
• 1 teaspoon toasted sesame seeds
• 1 teaspoon roasted peanuts, chopped
• small handful of fresh coriander, chopped
• ½ lime, juiced
• 1 tablespoon fish sauce
