Ingredients

• 1kg mixed dried fruit
• 2/3 cup brandy or orange juice
• 2 1/2 cups plain flour
• 1/2 cup self raising flour
• 1 teaspoon mixed spice
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 250g Western Star Unsalted Butter, softened
• 1 1/2 cups brown sugar
• 1 teaspoon vanilla extract
• 4 eggs, lightly beaten
• 1-2 tablespoons brandy, extra, optional
