Christmas pudding - 9Kitchen

Ingredients

• 850g mixed dried fruit (sultanas, raisins, currants, dates, prunes and glace ginger)
• 1 cup mixed nuts (include almonds, hazelnuts and pecans), toasted and coarsely chopped
• 2 small (200g) pears, peeled and grated
• zest of 1 lemon
• zest and juice of 1 orange
• 1 cup (250ml) brandy
• 185g butter, softened
• ¾ cup (185g) brown sugar
• 1½ teaspoons mixed spice
• 1½ teaspoons ground cinnamon
• ½ teaspoon ground nutmeg
• ½ teaspoon ground allspice
• ¼ teaspoon ground cloves
• 1 tablespoon treacle
• 3 eggs
• 2/3 cup (70g) ground almonds
• 2/3 cup (50g) fresh breadcrumbs
• 2/3 cup (100g) plain flour
• 1 teaspoon bicarbonate of soda
• pinch of salt
• 30g butter, melted
