- ½ teaspoon paprika
- ½ teaspoon ground cumin
- Coarse salt and freshly ground pepper
- 1¼ cups water
- ½ pound carrots (about 4 medium), quartered lengthwise and cut on diagonal
- ½ cup slivered almonds
- ½ cup raisins
- ¼ cup chopped fresh mint leaves, plus sprigs for garnish 1 tablespoon olive oil
- 4 skinless cod fillets (6 ounces each)
