Yealands Supper Club: Lettuce wedge salad

Ingredients

• 1 iceberg lettuce (2 if they're really small. You could use baby cos too)
• ½ cup mayonnaise
• 1 tsp dijon mustard
• 1 tsp red wine vinegar
• 2 tablespoons olive oil
• ¼ tsp sugar
• Salt and pepper to taste
• ¾ cup panko breadcrumbs
• 1 tbsp olive oil
