Ingredients

• 1 clove garlic, crushed
• 6 whole black peppercorns
• 1 cup red wine vinegar
• 2 turnips, peeled and thinly sliced
• 2 beetroot, peeled and thinly sliced
• For the chicken liver pâté:
• 250 g fresh chicken livers, trimmed
• 60 g butter, plus extra for frying
• 1 medium onion, finely chopped
• 2 cloves garlic, chopped
• 2 T cream
• 1 lemon, juice and zest
• 2 T flat-leaf parsley, chopped
• Sea salt and freshly ground black pepper, to taste
• 50 g white sugar
