• 1/4 cup extra virgin olive oil
• 10 ounces chorizo, sliced
• 1 large Spanish onion, diced
• 2 whole garlic cloves, sliced
• 6 medium potatoes, peeled and roughly chopped
• 8 cups cold water
• 1 pound kale, stems removed and leaves sliced into strips
• salt and pepper to taste
