Ingredients

• 1 tbsp olive oil
• 1 large onion, sliced
• 3 cloves garlic, thinly sliced
• 1 sweet potato (about 10 oz.), peeled and thinly sliced
• 1 red bell pepper, thinly sliced
• 1 pickled jalapeno pepper, finely chopped
• 2 tbsp tomato paste
• 2 tsp granulated sugar
• 3/4 tsp salt
• 1/2 tsp black pepper
• 2 cups 1% milk
• 1 can (15 oz.) solid-pack pumpkin puree
• 2 tbsp fresh lime juice
