Ingredients

• 2 Tbs. olive oil
• 1 shallot
• 3 cloves garlic
• 1/8 tsp. crushed red pepper
• 1 1/4 c. pearl barley
• 1/2 c. dry white wine
• 1 1/2 c. chicken broth
• salt and black pepper
• 5 oz. spinach
• 1/2 c. mascarpone cheese
• 1/2 c. parmessan, freshly grated
• 1 tsp. lemon zest
