• 1 (3-pound) boneless bottom round roast (rump roast)
• 1 tablespoon ground pepper
• 1 1/2 teaspoons paprika
• 1 1/2 teaspoons ground mustard
• 1/2 teaspoon allspice
• 2 teaspoons salt
• 2 tablespoons high-heat oil
• 2 large white onions, very thinly sliced
• 2 red peppers — cored, seeded and diced
• 12 French rolls
• 12 slices provolone cheese
