Ingredients

• 2 coloured bell peppers, seeded and cut into 12 wedges each
• 1 onion, cut into thin wedges
• 2 cloves garlic, chopped
• 2 tbsp (30 ml) olive oil
• 4 Italian sausages, mild or spicy
• 8 eggs
• 6 green onions, chopped
• 7 oz (200 g) cheese curds, coarsely chopped
• 2 tbsp (30 ml) flat leaf parsley, roughly chopped
• Salt and pepper
