Autumn Caesar with Fennel, Beets, and Apple | TASTE

Ingredients

• 1 tbsp extra-virgin olive oil
• ½ c panko bread crumbs
• Salt to taste
• 2-3 md fennel bulbs
• 1 sm golden beet, peeled, trimmed, and very thinly sliced
• 1 sm apple, such as Honeycrisp or Fuji, cored and very thinly sliced
• 1 bunch radishes, trimmed and very thinly sliced
• ¾ c finely grated Parmesan cheese, plus more for topping
• ⅓ c good quality mayonnaise, such as Best Foods
• 2 tbsp red wine or apple cider vinegar
• 2 tsp honey
• Salt and pepper to taste
