Cod Fish and Yuca Cakes – Quirch Chiquita

Ingredients

• 1 cup Chiquita Yuca
• 1 lb cod fillets
• 1/4 cup bread crumbs
• 1 tbsp of butter
• 1 scallion, finely chopped
• 1 garlic clove, finely chopped
• 1 tbsp cilantro, chopped
• 1/4 cup heavy cream
• 2 eggs, beaten
• 1/2 tsp mustard
• 1/4 tsp ground cumin
• Red pepper flakes
• Salt and pepper
• Oil for frying
