Ingredients

• 450g white fleshed fish
• 1L water
• salt and pepper
• 500ml white wine
• 1 red onion
• 4 garlic cloves
• 2 tbsp olive oil
• 3 garlic cloves, finely chopped
• 1 long red chilli, deseeded and finely diced
• 400g cooked chat potatoes, cut into 1cm pieces
• ½ bunch green onions, finely sliced
• 1 bunch dill, roughly chopped
• 50g cornichons, finely diced
• ¼ bunch parsley, finely chopped
• 200g flour
• 5 eggs, whisked
• 600g quality breadcrumbs
• oil for shallow frying
