- 6 small onions, cleaned & cut in half
- 3 celery stalks, cut into ½” pieces
- 2 cloves garlic, minced
- 3 carrots, cleaned & cut into ¼”- ½” slices
- 2 Tbs butter
- 1 Tbs balsamic glaze
- 1 lb button mushrooms, cleaned, stems trimmed, & halved if big
- 1 ½ lb cubed stew meat or lean beef roast
- 3 Tbs flour
- 1 tsp salt
- ¼ tsp pepper
- ½ tsp thyme
- 1 Tbs parsley
- 32 oz beef stock
- 16 oz Firehouse Red Ale by North Country Brewing
- 1 bay leaf
- 6 potatoes, peeled & cubed - soak in cold water
