• Sea salt and coarse freshly ground black pepper
• 3 tablespoons olive oil
• 1 can butter beans, drained
• 2 red onions, sliced thick
• 3 carrots, peeled and cut into bite size chunks
• 300g / 10 ½ oz cherry tomatoes, whole
• 125ml / ½ cup chicken stock
