- 1.5kg (3lb 5oz) stewing beef, cut into 6cm (2½in) chunks
- 150ml (5fl oz) red wine
- 3 tsp chopped thyme leaves
- 1 tbsp red wine vinegar
- 650g (1lb 7oz) floury potatoes, peeled and cut into 5mm (¼in) thick slices
- 25g (1oz) butter, diced
