• 400ml thickened cream
• 2 tbsp caster sugar
• 80g unsalted butter, chopped
• 1 tsp vanilla bean paste
• 400g dark chocolate, finely chopped
• 3 x 125g punnets raspberries, to serve

• 2 tbsp finely crushed freeze-dried raspberries
• ½ tsp citric acid
• 1 tbsp icing sugar
• ½ tsp bicarbonate of soda
• Pastry
• 6 medjool dates, pitted and chopped
• 1¼ cups (180g) almond meal
• 2 tbsp almond butter
• ¼ cup (25g) cocoa powder
• 2 tbsp maple syrup
• 1 tbsp melted coconut oil
• ¼ tsp salt flakes
