• 4 - Cherry Tomatoes finely diced
• 1 - Lime juice only
• 2 - SuperValu Avocado ripe
• 1 - Red Pepper finely chopped
• 3 - Spring Onions thinly sliced
• 2 tbsp SuperValu Fresh Coriander finely chopped, plus extra for garnish
• 200 g Sweetcorn drained
• 2 tbsp Olive Oil
• 1 pinch Pepper
