Ingredients

• 1 package (10 oz.) Ranchero® Queso Fresco, cut in 1" strips
• 1 lb. skirt steak
• 3 tablespoons olive oil
• 1½ cups cilantro, chopped
• 6 roma tomatoes
• 1 medium onion
• 1 tablespoon garlic, chopped
• 1 teaspoon dried Mexican oregano
• 1 lime, juiced
• 1 chipotle chile in adobo (canned, seeds removed)
• Salt and pepper to taste
