  • 4 lb. whelks or periwinkles, scrubbed
  • 6 heaping tbsp. vegetable shortening
  • 2 medium yellow onions, peeled and minced
  • 4 cloves garlic, peeled and minced
  • 6 heaping tbsp. flour
  • 6 heaping tbsp. tomato paste
  • 2 tsp. dried or fresh parsley
  • 1 tsp. dried or fresh thyme
  • 2 all-purpose potatoes, peeled and diced
  • Salt and freshly ground black pepper
