What bahamians know as whelks are Cittarium pica, the West Indian top shell, a kind of marine gastropod. They're hard to find in this country. Periwinkles, small marine snails, are a good substitute.
Ingredients
- 4 lb. whelks or periwinkles, scrubbed
- 6 heaping tbsp. vegetable shortening
- 2 medium yellow onions, peeled and minced
- 4 cloves garlic, peeled and minced
- 6 heaping tbsp. flour
- 6 heaping tbsp. tomato paste
- 2 tsp. dried or fresh parsley
- 1 tsp. dried or fresh thyme
- 2 all-purpose potatoes, peeled and diced
- Salt and freshly ground black pepper
