Ingredients

• 1 16-ounce ball of pizza dough, homemade or store-bought
• 2 cups cold water
• 1/4 cup salt
• 1 tablespoon granulated sugar
• 1/2 pound shrimp, peeled
• 1 tablespoon butter
• 1 large leek (or 2 small leeks), cut into thin slices (white and green parts) and washed
• 6 ounces mascarpone
• freshly ground black pepper
• 3/4 pound asparagus (about 1/2 bunch), prepared for pizza (see note)
