- 1/3 cup dried red chiles (preferably erjingtiao; see Note), cut into segments
- 2 tablespoons cumin seeds
- 1 1/2 teaspoons fennel seeds
- 2 pieces star anise
- Seeds from 2 cardamom pods
- 1 teaspoon whole cloves
- 2 tablespoons sugar
- 1 tablespoon kosher salt
