• 500g Otway Pork mince
• 1 tablespoon olive oil
• 1 small red onion, finely chopped
• 1 medium red capsicum, seeded and finely diced
• 2 garlic cloves, crushed
• 35g sachet taco seasoning
• 400g can black beans, drained and rinsed
• 1 cup coriander leaves, finely chopped + extra leaves to serve
• 520g Enchilada kit
• 1 cup grated tasty cheese
• Diced avocado, sour cream and lime wedges, to serve
