• 1 pound (16 ounces/475 g) mascarpone cheese at room temperature
• 1 1/2 cups (375 ml) pure pumpkin puree
• 1 tsp (5 ml) pure vanilla extract
• 1/2 tsp (2 ml) pumpkin pie spice plus more to garnish
• 1 1/2 cups (375 ml) heavy whipping cream
• 30 crispy Italian ladyfinger cookies (Savoiardi) cut in half
• Unsweetened cocoa powder to garnish
• Crushed amaretti cookies to garnish
