Ingredients

• Finely grated rind & juice of 4 clementines, plus 2 clementines, unpeeled & cut into thin slices
• 100ml gin or vodka
• 5 tbsp honey
• 1 tsp cracked mixed peppercorns
• 440g side of fresh salmon, bones removed
• For the salad
• 2 Little Gem lettuces
• 6 radishes, thinly sliced
• 2 ripe avocados, cut into slices
• 1 bunch spring onions, finely sliced
• 2 tbsp French dressing
