Chakchouka | Soups and Souks

Ingredients

• 4 tablespoons of olive oil
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 onion, sliced
• 2 garlic cloves, minced
• 2 teaspoons of smoked paprika
• 1 teaspoon of ground cumin
• 1/2 teaspoon of ground coriander
• 1/4 teaspoon of ground cinnamon
• 1/8 teaspoon of cayenne pepper
• 1 can (14.5 oz) of diced tomatoes with their juice
• Salt and black pepper to taste
• 4 eggs
• Fresh parsley or cilantro leaves, chopped, for garnish
