Chilli Jacket Potato – Mextrade Official

Ingredients

• -4 large baking potatoes
• -olive oil, the necessary
• -salt, to taste
• -3 to 4 tbsp pickled jalapenos, finely diced
• -4 tbsp mayonnaise
• -salt & pepper, to taste
• -500g mince (you can use a mix of pork and beef or even vegan mince protein)
• -1 pepper, finely diced
• -½ onion, finely diced
• -1 large tomato or equivalent, diced
• -2 garlic cloves, minced
• -2 tbsp tomato paste
• -1 or 2 chipotles in adobo, minced
• -1 tsp smoked paprika
• -¼ water or stock
• -salt and pepper, to taste
• -vegetable oil, as needed
