Potato and chorizo egg pie

Ingredients

• 1 -2 sheets ready rolled flaky pastry
• 2 tablespoon olive oil
• 1 onion, chopped
• 2 chorizo, chopped
• 1 red capsicum, chopped
• 3 medium potatoes (400g), parboiled and diced
• 4 eggs
• 3/4 cup cream
• sea salt and freshly ground black pepper
• 2 tablespoon chopped fresh chives or parsley
