Spanish Chicken, Chorizo and Chickpea Stew – The Gourmet Gays

Ingredients

• Olive oil for frying
• 1 Large onion diced
• 2 Peppers diced, I used 1 green and 1 red
• 4 Garlic cloves, finely chopped
• 1 Red chilli, chopped
• 1 tbsp Spanish smoked paprika, preferably hot
• 1 tsp Ground cumin
• 600 g Diced chicken, thigh or fillet
• 150 Chorizo, mini or larger diced into chunks or rounds
• 100 ml Red Wine
• 2 tbsp Tomato puree
• 200 g Chopped Tomatoes
• 200 ml Chicken Stock
• 1 tbsp Honey
• 400 g Chickpeas, drained
• 2 Handfuls of baby spinach
• Zest of one orange
• Handful of chopped parsley
