MELON AND ORANGE CURD TART - Orange Candy Melon

Ingredients

• 1 1/2 cups plain flour
• 2 Tbsp caster sugar
• 150g unsalted butter, chilled, chopped
• 1 egg yolk
• 2 Tbsp chilled water
• 1/4 small Orange Candy, skin removed, sliced
• 1/4 small honeydew melon, skin removed, sliced
• 2 passionfruit, halved
• 2 eggs
• 2 egg yolks
• 2/3 cup caster sugar
• 2 teaspoons finely grated orange rind
• 1 Tbsp cornflour
• 1/3 cup orange juice
• 100g unsalted butter, chopped
