Prime Rib with Bourbon Bacon Jam

Ingredients

• 1 steak West Creek® Beef, Prime Rib, 1 to 2 in. thick
• 2 lbs. bacon
• 1 cup shallot(s), finely chopped
• 1 cup garlic, finely chopped
• 1 onion(s), sweet, chopped
• 1/2 cup bourbon
• 1/2 tbsp chili powder
• 1/2 tbsp paprika, smoked
• 1/2 tbsp chipotle powder
• 1 cup bourbon
• 1 cup maple syrup
• 1/2 cup vinegar, balsamic
• 1/2 cup sugar, brown
• salt and pepper, to taste
