Ingredients

• 2 pounds medium yellow onions, peeled and sliced thin
• 2 garlic cloves, minced
• 10 sprigs of fresh thyme
• 1 bay leaf
• 4 tablespoons butter
• 2 teaspoons flour
• 1 cup dry white wine
• 6 cups beef stock or broth
• 4 ¾ inch pieces of baguette-cut crosswise
• 4 pieces sliced Gruyere cheese
• 2 tablespoons grated Parmesan cheese
• Salt and black pepper to taste
