Ingredients

• 1 kilo spinach
• 1 large onion, mashed
• 1 cup parsley, finely chopped
• 2 ripe tomatoes, peeled and finely chopped
• 3 spring onions, finely chopped
• 2 cups rice
• 1/2 teaspoon cumin (optional)
• Olive oil
• Salt and pepper to taste
