Yankee Fish Cakes

- 1 medium yellow onion, roughly chopped
- 1 stalk celery, roughly chopped
- 1 lb. boneless, skinless haddock or cod, cut into 4 large pieces
- 1⁄3 cup heavy cream
- 1 1⁄2 cups dried bread crumbs
- 3 tbsp. mayonnaise
- 2 tbsp. minced fresh dill
- 1 tbsp. Dijon mustard
- 1 tbsp. fresh lemon juice
- 1 tbsp. minced dill pickle
- 1 tsp. lemon zest
- 1⁄2 tsp. Tabasco
- 1 egg
- Kosher salt and freshly ground black pepper, to taste
