- 5 large mushrooms (for stuffing), with finely chopped stalks
- 1 tbsp oil
- 1 small zucchini, finely chopped
- ½ red pepper, sliced
- zest of 1 lemon
- 1 cup lettuce or mixed salad leaves
- 1 cup basmati rice
- 1 tsp water
- 1 lemon, cut into wedges for garnish
